aka: keeping it simple & still eating GOOD
This is one of those meals that just lives on repeat in my life right now.
Egg roll in a bowl :
Nothing fancy, nothing complicated… just real food that comes together quickly and actually tastes good. I’m using ground meat (whatever I have on hand), a bag of broccoli slaw or coleslaw mix, a little olive oil, soya sauce, a cornstarch slurry and some simple spices. That’s it. I’ll throw it over rice if I feel like it, and dinner is done without a whole production in the kitchen.
This is exactly where I’m at these days — I don’t want complicated. I want easy, doable, and something I can come back to again and again without thinking twice.
Also, a little real-life note for anyone who gets it… since having my gallbladder removed, I do have to pay attention to how foods sit with me. This has been one of those meals that just works. No issues with dumping syndrome, no discomfort after — just simple food that my body is good with.
It’s not about being perfect. It’s about finding what works for you and sticking with it.
